oreo cheesecake

I was thinking of having cheese cake when my friend took out a tcc voucher. We used it to share this yummy oreo cheesecake! Thank you God! It was a treat for me after a very stressful weekend at home cooking, housework n worrying about my dad's gastric pains. Praying that he will be willing to see a doc n get proper treatment. Read Psalms and comforted by Ps 124:8 "Our help is in the name of the Lord, who made heaven and earth." Having gotten feedback bout my blueberry muffins- too hard!- I decided to try again, with less flour (it's pronounced as "flower" i jus learnt), more milk and less egg white. And they became too moist n buttery arrrghh Nevertheless I had fun. Will try again.

courage to follow

I watched "Braveheart" on DVD last week. It was an awesome, inspiring story of William Wallace (played by Mel Gibson) whom fought with courage and passion for freedom for his country. He was betrayed by Scottish nobles whom were bribed with more land and cattle. Tragically, he died in the hands of the English. But his courage and passion inspired the Scottish to continue fighting and eventually gained their independence. I wonder sometimes if it was easier to live comfortably but mediocre-ly, or to live with challenges but with purpose. As I face some challenges at home, I'm forced to choose the kind of life I want. Either way, a cost must be paid. My prayer is that I'd have the courage and passion to follow Jesus, and live the life He intends for me to live. blueberry muffins

Though feeling lazy I decided to give the muffins another go. This time I added blueberries! Inspired by a read in Life! about a young gal who bakes, I decided to try my hands at muffins. By the way each blueberry pack is on sale now at NTUC at $2.95! This time seemed easier and faster and the results looked better yeah praise God! It's great to see the blueberries 'erupt' and ooze out from the top. I hope to make nicer blueberry muffins, with nice fluffy tops. And probably go on to banana walnut muffins..

muffins and pool

Today is my rest day and I spent an afternoon baking chocolate muffins! Unfortunately the muffin tray was too big for my oven and I make do by having 2 layers of paper linings. Still it didin't turn out pretty nor nice to eat sigh but I will try again, with a smaller muffin tray heh I wanted to give the muffins to my students whom I'd be meeting later for dinner but I decided they too ugly to be given ha Anyway we had dinner at Pasta Mania, and I tried the bacon aligio, spicy but yummy! And we played pool! It was a fun evening:)

cousin's wedding

On Sat I was busy the whole day at my cousin's wedding and I helped out as Jie Mei and at reception. In the morning, with the other Jie Meis we made the guys do push ups, drink wasabe drink n proclaiming "10 commandments" of love.. ha that wasn't too bad my first time being a Jie Mei ha.. At night it was the usual wedding dinner. Held at Novotel called Dragon Phoenix, the food was great! And I got to stay a night at the hotel after the wedding, enjoying air-con, cable tv n a good night's rest. What I realise from helping out at my cousins' weddings is that marriage is not just about the couple but the couples' families too. At times it can be painfully troublesome-with differences in opinions and mis- communication. Yet they are also the source of joy, chatter and laughter.
